Vegetable Pulao



Ingredients:-
Basmati rice- 2cups
Mixed vegetables like carrot, beans, peas, potato- 2 cups
Onion- 1 big, cut into strips
Ginger garlic paste- 1 tsp
Cumin seeds-1tsp
Green chilli-2 slit
Bay leaves-2
Garam Masala- 1/4 tspn
Salt to taste
Lime juice - 1 tsp
Oil-2 tbsp
Ghee-2 tbsp
Coriander to garnish.
Cloves-3
Cardamom-1
Cinnamon-1


Preparation:-

1. Wash and soak basmati rice for 30mins.
2.  Heat oil in a pan, add cumin seeds, cloves, bay leaves, cinnamon and cardamom .
3.  Once the seeds splutter, add Onion and cook till onion becomes translucent.


4. Add the ginger garlic paste and green chillies and stir for a min.
5. Add chopped vegetables, sprinkle some salt and saute till the vegetables are soft.
6. Add the garam masala and stir for a min.
7. Add 4 cups of water and salt. Mix well and bring to boil.
8.Now add drained rice and 1 tsp of ghee. Cover and simmer on low heat for 15 mins.
9.Garnish with ghee, coriander leaves, lime juice and mix well.
10.Serve hot with raitha.
