Blueberry Milkshake

 





Ingredients:-

🌸Blueberry - 1 cup
🌸Whole milk - 1 cup
🌸Vanilla ice Cream ( Optional)
🌸Cardamom powder - 1/4 tsp
🌸Ice cubes- 3-4 nos
🌸Sugar - 3 tsp
🌸A pinch of Salt

Preparation:-
🌸Place all ingredients in a blender. Blend until smooth.
🌸Pour into a serving glass and Enjoy !

Ingredients

💛 Greek Yogurt or plain yogurt - 2 cups
💛 Powdered sugar - 6 tbsp
💛 Cardamom powder- 1/4 tsp
💛Saffron - 1/4 tsp
💛 Warm milk - 2tbsp
💛 Crushed nuts ( Pistachio, Almond and cashews) - 2tbsp

Instructions
——————-
💛 Place a strainer in a large bowl. Line a muslin cloth over the strainer. Pour the yogurt onto the Muslin cloth and tie into a bundle. Bring edges of cloth together and put some weight on top.
💛Strain atleast overnight or up to 24 hours in the refrigerator. Set aside.
💛 Add saffron to warm milk and keep aside.
💛 Transfer thickened yogurt in a large bowl .
💛Add the sugar, cardamom and saffron soaked in milk into it. Whisk it well for 3-4 minutes to make it smooth.
💛 Then add crushed nuts and mix well.
💛Chill for 1-2 hours before serving.
💛Serve in bowls and optionally garnish with crushed pistachios, gulab jamun and saffron strands.




Mango Lassi

🥭Mango-1 small
🥭Yogurt -1 cup
🥭Sugar as per your taste
🥭Salt - a pinch
🥭 Nuts (pistachio, almond, walnut and cashew nuts) - few
🥭Ice cubes - few

Preparations:-

🥭In a blender add all the ingredients and blend it well until smooth . Serve chilled in glasses.



pomegranate milkshake

Pomegranate milkshake



Place the pomegranate seeds in a blender and pulse it a few times and strain the juice and discard the seeds. Then add milk and sugar or honey to the filtered milkshake and blend again. Serve immediately .



 

Ice Apple Rose Milk ( Nungu Rosemilk )

 

Ingredients:

🌰 Tender ice apple ( Toddy palm seeds), peeled and chopped fine- 4
🌰 Milk (boiled, cooled and chilled) - 2 cups,
🌰 Rose syrup - 2 tbsps
🌰 Sugar as needed

Instructions:
——————-
🌰 Boil milk with sugar and let it cool completely.
🌰Wash the tender ice apple and remove the out skin.
🌰Chop the peeled tender ice apple into small pieces.
🌰 In a blender , add cooled milk, rose syrup and chopped tender ice apple and blend it well. 
🌰 Add more sugar if required. Refrigerate it for some time.
🌰Pour into a glass and serve chilled.

Green Smoothie



Easy and healthy green smoothie is loaded with spinach, peas , oats and banana. Blend it all together until smooth. This will make for quick smoothie blends in the morning or for an afternoon snack. You can refrigerate for up to one day.

Fish curry / meen kuzhambu (South Indian style)



Ingredients:
🦈 Fish - 1 kg 
🦈Small onions - 10 to 15
🦈Tomato - 1 medium
🦈Green chilli - 3 
🦈Garlic pods - 8 or 10
🦈Turmeric powder - 1/4 tsp
🦈Red Chilli powder - 2 tsp
🦈Coriander powder - 1.5 tsp
🦈Tamarind paste - 1tbsp( as per your taste)
🦈Fennel powder- 1 tsp
🦈Salt - as required
🦈Oil - 3 tbsp (preferably gingeley oil)

To season:
🦈Fenugreek seeds - 1/4 tsp
🦈Mustard seeds+Urud Dal - 1/4 tsp
🦈Thaalippu Vadagam( sun-dried seasoning balls) - 1/4 tsp
🦈Cumin seeds - 1/4 tsp
🦈Curry leaves - 1/2 sprig(reserve the other half of the sprig for later)

Preparation:-

🦈Clean and wash the fish well . Cut them into pieces. Keep them aside.
🦈In a wok/kadai ,add oil. Once it heats up,add fenugreek seeds, mustard seeds, vadagam, cumin seeds, and curry leaves.
🦈Add garlic pods and saute them for a minute.
🦈Add chopped small onion, tomato , green chilli and a little salt , saute it very well .
🦈 Then add 2 cups of water , red chili powder, coriander powder, turmeric powder and fennel powder. Continue cooking for half an hour on low flame.
🦈Add tamarind paste and bring to boil.
🦈 Add fish pieces and salt into the boiling mixture . Continue cooking for 15-20 minutes or until the curry is thick.
🦈Once fish is cooked well and remove from fire.
🦈 Garnish with coriander leaves and serve hot with boiled rice .

  

PAV BAJJI

☘️Pav Buns-2-4
☘️ Potatoes -2
☘️Coriander Leaves-1/2 cup
☘️Green Peas- 1 cup
☘️Onions, finely chopped-2medium size
☘️Tomatoes, finely chopped- 2
☘️Green Chillies, finely chopped-3
☘️Cloves of Garlic, minced-3-4
☘️Ginger, grated-1inch
☘️Butter-2tsp
☘️Cumin Seeds -1 tsp
☘️Red Chilli Powder-1tsp
☘️Garam masala -1tsp
☘️Turmeric Powder- 1/2 tsp
☘️Salt to taste
 



Method:

☘️Add potato and peas to a large pot of boiling water and cover with a lid. Boil them along with salt till it become soft and cooked well.
☘️ Melt butter in a big pan or wok. Add Cumin Seeds and let them splutter.
☘️Then add minced ginger, garlic and finely chopped green chili .
☘️Add finely chopped onions and cook them for 2-3 minutes till they turn golden brown.
☘️Then add chopped tomatoes and cook till the raw smell of tomatoes goes away.
☘️Add Red Chili Powder, Turmeric Powder and Garam Masala to the gravy.
☘️ Add the boiled potato and peas . Mash and mix with the gravy.
☘️ Add water to adjust the consistency. It should be of a slightly thick consistency.
☘️Add butter to the gravy. Pav Bajji is ready.
☘️Sprinkle lime juice, finely chopped onions and coriander leaves on the Bajji and serve with toasted buns.

Crispy Cauliflower Pakoda

 


Ingredients:
——————-
🥦 Cauliflower Florets- 2cups
🥦 All Purpose Flour / Maida- 1 cup
🥦 Corn Flour- 4tsp
🥦 Red chilli powder -1tsbp
🥦 Fennel powder -1/2 tsp
🥦 Salt to taste
🥦 Ginger Garlic Paste-1tsp
🥦 Curry Leaves -handful
🥦 Green Chillies- for garnishing
🥦 Cooking Oil for Deep frying

  


  


Method:
———-
🥦 Wash and cut the cauliflower into bite size pieces.
🥦 Put it into the hot water for 5 -10mins with a bit of salt. Once done, drain and keep it aside.
🥦 In a bowl, mix all purpose flour/maida flour, corn flour, salt, ginger garlic paste, fennel powder, red chili powder and sprinkle over the cauliflower.
🥦 Sprinkle water to ensure the florets get a good coating of the flour.
🥦 Heat oil in a wok/kadai and when oil is hot, gently drop the cauliflower florets and deep fry.
🥦 Drain on a kitchen towel.
🥦 Then fry the curry leaves and green chilies.
🥦 Transfer the pakodas to a serving platter and add the curry leaves and green chillis.
🥦 Serve hot.

Sooji and Vermicelli Kesari

 


Ingredients

🌱Rawa(Sooji) -1 cup
🌱Vermicelli -1/4cup
🌱Sugar-1/4 cup
🌱Ghee-4tbsp
🌱Cardamom Powder- 1/2tsp
🌱Cashewnuts-6-8
🌱Raisin -8-10
🌱Milk -1 cup
🌱Rose water - 1tsp
 


Instructions
——————-
🌱Dry roast the vermicelli and sooji over a low-medium flame for 4-5 minutes and set aside.

🌱Heat two tablespoons of ghee in a pan and add the cashews. Fry until light golden color.

🌱Add raisins to it and continue roasting till golden brown color. Remove them from the pan and set aside.
🌱In the same pan, add 1cup of milk , add little water and sugar. Mix well and let it boil.
🌱Now add roasted sooji and vermicelli and mix well without any lumps.

🌱Keep stirring and cook until the mixture is thick and kesari is completely cooked.

🌱Add cardamom powder and rose water and mix well.

🌱When the mixture thickens and leaves the sides of the pan, add the fried cashews and raisins and combine well.

🌱Remove from the flame and serve warm .

  

Milagai Bajji / Mirchi Bajji / Chilli Bajji

  



Ingredients:

🌶 Chillies - 6 to 8
🌶 Besan  flour -2 Cups
🌶Rice Flour - 2 tbsp
🌶 Baking soda - a pinch (optional)
🌶 Asafoetida - a pinch
🌶 Turmeric powder - 1/2 tsp
🌶 Red Chili Powder - 2 tsp (according to your spice level)
🌶 Ginger garlic paste - 1tsp
🌶 Salt - to taste
🌶 Fennel powder - 1tsp
🌶 Oil to deep fry
 

  


Preparation:
———————
🌶 Cut the chillies in half length-wise. Remove some of the seeds if you want to reduce the heat a bit.
🌶 In a wide bowl mix besan  flour, rice flour, red chili powder, asafoetida , baking soda, ginger garlic paste , fennel powder, turmeric powder and add water into it little by little to make a loose batter. The batter shouldn’t be too thick but should be a little loose.
🌶 Heat oil in a wide pan, dip the sliced chillies in the batter and just make sure it’s coated well on all the sides.
🌶 Drop them into the oil and after 2 minutes gently turn them over.
🌶 Fry them till bajji’s become golden brown.
🌶 Serve them with hot tea/coffee and coconut chutney etc.
