Ingredients:-
Olive oil - 1 tsp
Egg - 2
Mushroom - 1/2 cup
Broccoli - 1/2 cup

Spinach - handfull
Onion - 3/4 cup
Corn - 1/2 cup
capsicum - 1/2 cup
Black pepper powder - 1 tsp
salt - a pinch
Sour cream - 1 tsp
Shredded cheddar cheese - 1 tsp
Potato - 1 ( For hashbrowns)
Preparation:-
1. Heat a olive oil in a pan, add Onion, Broccoli, Capsicum ,Mushroom, pepper powder and salt, saute for few minutes. Remove from pan and set aside.
2. Beat eggs and milk together, set aside.

3. Warm a frying pan on medium heat with a little bit of oil in it.
4.Once oil is heated in pan, pour in the beaten eggs until they cover the bottom of pan.
5.When eggs appear to be setting, carefully lift edges of eggs and flip over.

6. Add Vegetable Toppings , cheese and sour cream last and fold over.
7.Remove from pan and serve hot with toasted bread and crispy hashbrowns.
