Mushroom Soup


 

Ingredients:

——————-
πŸ„ Mushrooms- 4 to 5 big
πŸ„ Sweet onion - 1 small
πŸ„ Garlic pods - 3 or 4
πŸ„ Broccoli, florets( finely chopped) 4or 5
πŸ„ Pepper Powder - 1tsp
πŸ„ Oliveoil - 1tsp
πŸ„ Butter - 1tbsp
πŸ„ Heavy cream - 1/2 cup
πŸ„ Salt as needed
  


Method:
————-
πŸ„ Heat the olive oil in a large soup pot over medium heat. When oil is hot, add the chopped garlic pods and chopped onion. Cook about 5 minutes, until softened .
πŸ„ Then add chopped mushrooms and a pinch of salt. Cook, stirring, until the mushrooms soften. Set aside.
πŸ„ Now transfer stir fry onion, garlic and mushrooms into the blender. Blend until very smooth. Keep it aside.
πŸ„ Heat the butter in a soup pot. When the butter melts, add the finely chopped mushrooms and finely chopped broccoli. Cook until softened.
πŸ„Now pour the onion-garlic-mushrooms mixture(paste) into it. Stir and cook for about two minutes more.
πŸ„Finally add heavy cream and pepper powder and mix well. Cook about 2 mins.
πŸ„Serve warm in bowls.

Manchow Soup

Manchow Soup is popular soup recipe from Indian chinese cuisine.It’s a spicy and hot soup made from mixed vegetables.

      


Ingredients:-
——————-
  • Ching's Secret soup powder (store bought soup packet) - 100ml ( 6-7 tablespoons)
  • Boiled pasta - 1 cup
  • Water - 2 cups
Method:
————
  • In a bowl , combine 2 cups of water and manchow soup powder. Stir well without any lumps .
  • Pour this mixture in the saucepan .
  • Bring the soup mixture to a boil and simmer for 5 minutes .
  • Finally add boiled pasta and simmer for 2 minutes.
  • Turn off the flame and serve warm .

Ramadan Nombu Kanji (Chicken Nombu kanji)

 


Recipe ⏬⏬
πŸ–‹Ingredients:-
Basmati - 1 cup
Moong dal - 1/4 cup (washed and soaked for 1 hr)
Chicken boneless- 1/2 lbs
Onion - 1 (chopped finely)
Tomatoes - 1
Mint leaves - 1/4 cup
Curry leaves - few
Coriander leaves - 1/4 cup
Salt to taste
Carrot - 1/4 cup (diced)
Ginger garlic - 2 tbsp
Turmeric powder - 1/2 teaspoon
Ghee - 2 teaspoon
Green chilies - 3-5 (slit)
Bay leaves - 1
Cardamom - 2-3 pods
Cinnamon - 1 inch
Cloves - 2
Coconut milk - 1 cup

 



Preparations:-
πŸ–‹Heat ghee in a pressure cooker. Add bay leaves, cardamom, cinnamon , cloves , curry leaves and green chillies. Fry till nice aroma released. Add onion, ginger garlic paste, and tomato fry for a min.
πŸ–‹Add chicken pieces and fry for another min.
πŸ–‹ Add mint leaves , coriander leaves, rice ,soaked moong dal and diced carrot , 3 cups of water , turmeric powder and required salt. Mix well.
πŸ–‹Pressure cook for at least 4 whistles. let it cool down and open the lid and mash it with ladle.
πŸ–‹ Add coconut milk and coriander leaves. mix well. Don't cook for a long time after adding coconut milk.
πŸ–‹Serve hot.

Mutton Bone soup/ Mutton Nalli soup / Mutton Bone Rasam

Recipe

Ingredients:-
* Mutton - 1 lb
* Ginger, crushed- 1 tbsp
* Garlic, crushed - 1 tbsp
* Small onion, chopped- 10-15 no’s
* Tomato - 1
* Green chillies - 1
* Curry leaves - few
* Bay leaves - 1
* Cinnamon stick - 1
* Stone flower- 1
* Cloves- 1
* Coriander leaves - few
* Salt to taste
* Gingely Oil - 2 tbsp
For masala powder:-
* Cumin seeds - 1 tbsp
* Dhoor dhal - 1 tbsp
* Pepper corn - 1 tbsp
* Fennel powder - 1 tbsp
* Coriander seeds- 1 tbsp
* Cinnamon sticks - 1/2
* Cloves- 1
* Stone flower - few
* Dry red chili- 2

  




Preparations:-
✔️ Heat a pan, dry roast , pepper corn, cumin seeds, dhoor dhal, fennel seeds, coriander seeds, cloves, stone flower, dry red chilli, and cinnamon stick. saute for a minute. Let it cool down .
✔️ Transfer to a mixer jar and grind it to a fine powder. Set aside.
✔️Heat oil in a pressure cooker, add bay leaves, Cinnamon sticks, stone flower, cloves and dry red chili . Sauté for a minute.
✔️ Add crushed ginger , crushed garlic and curry leaves . Sauté until raw smell goes away.
✔️ Then add crushed onion , green chilli and tomato till it becomes transparent.
✔️Now add mutton bones along with turmeric powder, grounded masala powder and red chili powder. Mix it well.
✔️Pour 4 cups of water and salt and stir well.
✔️ Close the cooker with its lid and then cook for a 8-10 whistles or more till they are cooked completely.
✔️Remove from flame and set aside until pressure drops.
✔️ Serve hot as soup or with rice or appam.

Kozhi Rasam | Chicken Soup | South Indian Chicken Soup

Ingredients:-
  • Chicken (cleaned and chopped) - 250 gms
  • Tomato - 1 big, chopped
  • Turmeric powder - 1/2 tbsp
  • Cilantro - few for garnishing
  • Salt as needed
To Grind:-
  • Green chillies  - 3 nos
  • Small onions - 5 or 6 nos
  • Ginger  - 1 inch piece
  • Garlic pods- 5 or 6 nos  
  • Cumin seeds - 11/2  tbsp
  • Coriander seeds - 1 tbsp
  • Pepper corns - 1  tbsp
To Temper:-
  • Oil - 1 tbsp
  • Mustard seeds - 1 tbsp
  • Curry leaves - few
  • Bay leaf - 1
  • Cinnamon stick -1
  • Cumin seeds - 1/4 tbsp
  • pepper corns - 4 to 5 nos

Preparation:-
  • Clean the chicken and  Cut it into small pieces. keep aside.
  • Grind the onions, green chillies, ginger, garlic, cumin seeds, coriander seeds and pepper corns to a fine paste.

  • Heat 1 tbsp of oil in a pressure cooker and temper mustard seeds, cinnamon, peppercorn, cumin seeds, bay leaf and curry leaves. and  let it pop.
  • Then add the ground onion paste and cook till the oil separates.


  • Now add the tomatoes, turmeric powder, and cook till the raw smell disappears.

  • Add the chicken pieces and saute for 5-15 minutes. 
  • Add water and salt. Mix well.
  • Close the lid and pressure cook for 3-4 whistles. 
  • Remove from the heat and allow the pressure to settle.
  • Garnish with fresh cilantro.
  • Serve hot with rice or serve it as soup.

Mutton Lemon Soup


Ingredients:-
  • Mutton with bone- 1 lb or 1/2 kg
  • Small onions/ Pearl onions - 2 nos
  • Tomato - 1
  • Green chillies - 4 or 5 nos
  • Turmeric powder - 1 tbsp
  • Ginger garlic paste - 1/4 tbsp
  • Pepper powder - 1/2 tbsp
  • Cumin powder - 1/2 tbsp
  • Fennel powder - 1/2 tbsp
  • Coriander leaves - few
  • Lemon juice - 1 tbsp
  • Salt as needed
  • Water as required

For Tempering:-
  • Cumin seeds - 1/4 tbsp
  • Bay leaves - 1
  • Cinnamon stick - 1
  • Curry leaves - few
  • Crushed Ginger- 1 tbsp
  • Crushed Garlic - 1 tbsp
  • Oil
Preparation:-
  • In a pressure cooker, add mutton pieces and all the ingredients except lemon juice.
  












  • Cover with cooker lid and whistle and wait for 6 whistles or till the mutton is well cooked.
  • Remove from flame and set aside until pressure drops.
  • Heat oil in a pan, add cumin seeds, bay leaves and cinnamon stick.
  • When its splutter, then add curry leaves, crushed ginger and crushed garlic. Stir fry for a minute or until browned.





  • Now add this to the mutton mixtures. Mix well and then bring the soup to a boil.
  • Season with lemon juice and pepper powder. 
  • Garnish with fresh coriander leaves.
  • Remove from fire and serve hot.

Mutton Stew


Ingredients:-
  • Mutton - 1 lb
  • Ginger, finely chopped - 2 tbsp
  • Garlic, finely chopped - 2 tbsp
  • Ginger garlic paste - 1/2 tbsp
  • Tomato - 1
  • Green chillies - 2 
  • Curry leaves - few
  • Cumin seeds - 1 tbsp
  • Onion, chopped - 1
  • Coconut milk - 2 cups
  • Bay leaves - 1
  • Cinnamon stick - 1
  • Pepper powder - 1 tbsp
  • Cumin powder - 1/2 bsp
  • Fennel powder - 1/2 tbsp
  • Coriander leaves - few
  • Lemon juice - 1 tbsp
  • Salt to taste
  • Oil

Preparation:-
  1. Pressure cook the mutton pieces along with salt, cumin powder, fennel powder, tomato, ginger garlic paste and pepper powder for 6 whistles or until mutton is soft and done. 
  2. Heat oil in a pan, add cumin seeds, bay leaves and cinnamon stick. saute for a minute. 
  3. Add onions, ginger, garlic, green chillies and curry leaves till it becomes transparent.
  4. Now add mutton mixtures and bring the mixture to boil.
  5. Reduce to low heat and add coconut milk. Let it cook for 3 to 4 minutes.
  6. Turn off the flame and finely add lemon juice.
  7. Garnish with coriander leaves and serve hot with appam, naan, dosa , chappati and toasted bread.

Oats Porridge / Oats Kanji


Ingredients:-
  • Oats - 3 or 4 tsp
  • Onion, chopped - 1nos
  • Tomato, chopped - 1 nos
  • Green chilly, chopped - 1 nos
  • Grated ginger garlic - 1 tsp
  • Mixed Veggies, Chopped - 1 cup (Carrot, beans, Corn and peas)
  • Milk - 1/2 cup
  • Pepper powder - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Chilly powder - 1/2 tsp
  • Cilantro, chopped - 2 handful
  • Curry leaves - 1 spring
  • Water - 2 cups
  • Ghee - 1 tsp
  • Oil - 1 tsp
  • Salt - to taste 

Preparation:-
1. Heat a pan with oil, add grated ginger garlic and curry leaves. Saute for a minute.
2. Add green chilly, onion and tomato. Saute till onions turn translucent.
3. Then add mixed veggies and saute until raw smell leaves.
4. Add oats, saute for a couple of minutes.
5. Add 2 cups of water ,combine well and cook for 5 more minutes.
6. Add chilly powder, turmeric powder  and salt. Mix it well.
7. Now add milk , combine well and cook for a minute.
8. Finally add pepper powder and Ghee.
9. Garnish with cilantro.
10. Remove the porridge from the heat.
11. Serve hot.

Mutton Soup


Ingredients:-
Mutton - 1/4 kg ( Chopped and cleaned)
Small Onion - 5 or 6
Green chillies - 3
Ginger - 1½ inch long piece
Garlic - 3 pods
Tomato - 1 big
Curry leaves - few
Coriander leaves -a handful

Spring onion - 1
Cinnamon stick - 1 small stick 
Bay leaves - 1
Cumin seeds - 1 tsp
Fennel seeds-1/2 tsp
Crushed peppercorn - 1 tsp
Crushed cumin - 1/2 tsp
Crushed fennel - 1/4 tsp
Turmeric powder - 1/4 tsp
Salt - As per taste
Oil


Preparation:-
  1. Heat the pressure cooker pan with  oil, add cinnamon stick, bay leaves, cumin, fennel, and fry.
  2. Add curry leaves, green chillies, and Crushed ginger garlic. Saute for few minutes.
  3. Then add chopped onions and saute on low flame until the onions turn translucent. 
  4. Add  chopped tomato pieces and give a stir.
  5. Now add the washed mutton pieces and saute on low flame for a minute. 
  6. Then add turmeric  powder , Salt and saute again for a minute. Pour 4 cups of water and stir well.
  7. Add the crushed Pepper corn, crushed cumin seeds and fennel seeds, some fresh whole curry leaves, chopped coriander leaves and stir well. 
  8. Close the cooker with its lid and then cook for a 6-8 whistles or more till they are cooked completely.
  9. Remove from flame and set aside until pressure drops.
  10. Garnish with coriander leaves and spring onion.
  11. Serve hot as soup.

Tomato Tamarind Rasam



Ingredients:-
Tamarind – 1 lemon sized ball
Peppercorns – 2 tsp
Cumin Seeds – 1 tsp
Garlic – 5 cloves 
Tomato ,cut into 4 pieces – 1 no
Asafoetida Powder  – 1/4 tsp
Turmeric Powder – 1/2 tsp
Salt to taste – 1 tsp
Coriander Leaves, chopped – 1 tbsp


For Seasoning
Oil  – 1 tsp
Mustard  Seeds – 1/4 tsp
Dry Red Chillies  – 2 no
Curry Leaves  – 1 stalk



Preparation:-
  1. Soak the tamarind in warm water for 10 minutes until it becomes soft and mashable. Keep it aside.
  2. Crush the Garlic Pods, Peppercorns and Cumin Seeds. Keep it aside.
  3. In a large vessel, mix the Tamarind juice, Tomatoes, Asafoetida Powder, Turmeric Powder, Salt, chopped coriander leaves ,2 cups of Water , crushed garlic/peppercorns and cumin seeds. keep it aside.
  4. Heat oil in a  pan and splutter the mustard seeds and cumin seeds.
  5. Now add the curry leaves and dry red chillies into the  pan and fry for a minute . Pour it over the tamarind mixture from step 3. 
  6. Let it boil for 4-5 minutes. Now switch off the stove.
  7. Garnish Rasam with Coriander Leaves and serve it hot.
