Thai Coconut soup with Mushroom and Shrimp


Coconut milk - 1 cup
Ginger garlic - peeled and sliced.
Jalapenos/ g chillis - 1 or 2
Lemon juice - 1 tsp
Shrimp - 1 cup
Mushroom- 1 cup
Tofu- 1 cup
Spring onion - 2
Cilantro - handful
Tomato - 1
Onion-1/2 cup

  1. Tomato, Ginger, garlic,g.chilli - Grind it well like a paste.
  2. Boil tomato paste.
  3. Fry mushroom, jalapenos/capsicum with olive oil. keep it aside.
  4. Fry onion, shrimp, R.chilli. keep it aside.
  5. Heat a pan. add garlic(chopped). Fry it until lightly brown.
  6. Add fried mushroom to the biled tomato and reduce heat.
  7. Finally add salt, a pinch of sugar, reduce the heat.
  8. Add coconut milk, spring onion, Fried shrimp and cilantro.
  9. Finally add little bit of lemon juice.
  10. Serve immediately.
