Apricot Ginger Jam


Apricots, cut into small pieces - 3 nos
Lemon juice - 3 tsp
Sugar - 6 tsp
Grated fresh ginger - 1 tsp
Water - 1/4 cup

  1. In a small sauce pan, stir together the apricots and the sugar. Continue cooking and stirring over medium-high heat for 5-6 mins and mash the fruit a little until a chunky texture is reached.
  2. Now add lemon juice, water and grated fresh ginger . Bring the mixture up to a boil, stirring frequently.
  3. Remove the pan from the heat.
  4.  Let cool, transfer to a glass container with a tight fitting lid, and store it in the refrigerator, up to three weeks.
