Ingredients:
Whole wheat flour - 1 cup
Baking powder - 1/4 tsp
Salt - 1 tsp
Warm water - 1 cup
Olive oil - 1 tsp
Cucumber - 1
Spinach - 1 cup
Sliced onion - 1
Sliced tomato - 1
Pinto beans - 1 cup
Reduced fat cream cheese - 2 tsp
Prepare wheat tortillas:-
- In a large mixing bowl, whisk together the flour, baking powder, and salt.
- Add warm water, Knead with hands until a smooth dough.
- Cover dough balls with plastic wrap and let rest at least 30 minutes.
- Roll it into a circle and Grill on both sides. Set aside.
Prepare rolls:-
- Boil pinto beans along with salt and pepper. Cook until its done.
- Spread tortilla with reduced fat cream cheese.
- Top with cucumber slices, onion, tomato and spinach and roll up.
- Serve immediately.
