Guacamole


Ingredients:-
Avocados, peeled, pitted, and chopped/mashed - 2


Red onion, chopped - 2 nos
Jalapeno pepper/capsicum, minced - 1/2 cup
Cucumber chopped - 1 ( 1/4 cup)
Tomato - 1
Lemon juice - 1 tsp
Corn - 1/2 cup
Salt and pepper
Chopped fresh cilantro leaves, to taste
Tortillas

Preparation:- 
  1. Combine all ingredients in a molcajete/blender and mix to a chunky consistency.
  2. Season, to taste, with salt, pepper, and cilantro. Serve immediately with tortilla chips.



Chicken Satay


Ingredients:-

Chicken Breast or thighs (boneless and skinless)
Olive Oil
Bamboo Stewers
Cucumber and spinach for garnishing 



To Marinate:-
Soy sauce- 1 tsp
Ginger garlic paste/ powder - 1 tsp
Shallots - 5 nos
Dried basil - 1 tsp
Red pepper pdr/ paste - 1 tsp
Lime juice - 1 tsp
Black Pepper pdr- 1/4 tsp
Cumin powder - 1/4 tsp
Sugar & Salt


Preparation:-

1. If using wooden skewers, soak them in water while you prepare the meat. 
2. Cut chicken into thin strips and place in a bowl.
3. Place all marinade ingredients in a food processor or blender. Process well.
4. Pour the marinade over the meat and stir well to combine. Allow at least 1 hour for marinating, or longer (up to 24 hours)


5. When ready to cook, thread meat onto the skewers. 

6. Grill the satay.
7. Serve hot with fresh cucumber pieces and Peanut butter sauce for dipping.

THAI CHICKEN COCONUT SOUP

Ingredients:

🥥Coconut milk - 2 cups
🥥Ginger garlic - peeled and minced
🥥Jalapenos/ g chillis - 1
🥥Lemon juice - 1 tsp
🥥Lemon zest -1 tsp
🥥Chicken breast, thinly sliced- 1 cup
🥥Mushroom, sliced- 1 cup
🥥Capsicum , sliced- 1/2 cup
🥥Cilantro - handful
🥥Tomato , sliced - 1
🥥Onion, sliced -1
🥥Salt and pepper- as required
🥥 Cilantro- handful
🥥Sugar - a pinch
🥥Olive oil - 1 tsp

Preparation:

🥥In a medium pot, heat the olive oil over medium heat. Add the onion, ginger, garlic, jalapeno or green chilli , lemon zest, and stirring frequently, for 5 minutes, or until onions are softened. 
🥥Add sliced mushroom , tomato , capsicum salt and pepper . Saute it until lightly brown.
🥥Add coconut milk , a pinch of sugar and chicken breast and simmer until chicken pieces are cooked well.
🥥Finally add 1tsp of lemon juice and cilantro and mix well.
🥥Ladle the soup into serving bowls and Serve with slices of lime.

  

Grilled Shrimp With Corn Relish



1. Grilled shrimp:-

Ingredients:-
 Brown sugar - 1 tsp
 Chilli powder - 2 tsp
 Salt - a pinch 
 Onion , Ginger garlic , corainder leaves - Grind it like a paste.
 Soy sauce and Vinegar.

Preparation:-

  1. Marinate shrimp with Onion paste, Chili powder, Brown sugar, Vinegar, Soy sauce, toss well to coat.
  2. And rest it for half an hour.
  3. Grilled it.


2. Corn Relish:-

Ingredients:-
Corn - 1 cup
Capsicum - 1/2 cup
Onion - 1 big
Tomato - 1
Mushroom - 1/2 cup
Spring onion - 2
Peanuts(crushed)-2 tsp
Co.Leaves- handful
Black pepper- a pinch
Salt- 2 tsp
Chilli Sauce - 2 tsp
Ginger garlic chopped - 2 tsp
 Olive oil - 1 tsp
Brown sugar- 1 tsp
Vinegar- 1 tsp


Preparation:-
  1. Heat the oil in Skillet.
  2. Add g.g(chopped), capsicum, jalapenos , cook until soft but nut brown.
  3. Increase heat to high and add onio, pepper(capsicum),mushroom,corn, tomato, cook until the vegetables most of the juices evaporate, 3-5 minutes.
  4. Add brown sugar, salt, vinegar,  chilli sauce & black pepper and cook until the vegetables are tender, about 5 min.
  5. Stir in peanut and cilantro.
  6. Will keep in fridge for 5 days.
  7. Serve hot with grilled shrimp.

Stir fry noodles with Meatballs


 






Ingredients:-
For Noodles:-
  • Rice noodles - 1 bowl
  • Red chilli   - 5
  • Vinegar  - 1tsp
  • Garlic  - 5 cloves
  • Ginger garlic paste -2 tsp
  • Ajinomoto   - a pinch
  • Seasame seeds  - 1 tsp
  • Soy sauce - 1tsp
  • Pepper powder - 1 tsp
  • Onion  - 1 big
  • Tomato  - 1
  • Green chilli - 3
  • Cilantro - handfull
  • Egg - 2 scrambled
  • Chopped beans- 1/2 cup
  • Chopped carrots - 1/2 cup
  • Capsicum- 1/2 cup
  • Spring onion   / scallions - 1/2 cup
  • Chopped cabbage - 1/2 cup
  • Broccoli- 1/2 cup
  • Spinach  - 6 or 7 leaves
  • Lemon juice- 1 tsp
  • Salt - a pinch
  • Brown sugar - 1 tsp
For Chicken Meatballs:-
  • Chicken breasts - 1 pound
  • Bread crumbs -  4 tsp
  • Dried parsley - 1 tsp
  • Chopped cilantro - 1/4 cup
  • Pepper powder - 1/4 tsp
  • Finely Chopped onion - 1
  • Ginger garlic paste - 1 tsp
  • Egg - 1
  • Salt to taste
To prepare meatball sauce:-
  • Tomato - 2
  • Garlic cloves, finely chopped - 5 or 6 nos
  • Green chilli - 2 nos
  • Red pepper flakes - 2 tsp
  • Dried Basil -  1 tsp
  • Olive oil - 1 tsp
Preparation:-

  1. To Prepare Noodles:-

 To Prepare Red chilli Sause:-
  1. Soak Red chilli in 5 mins.
  2. Grind soaked red chilli, 1 tsp of vinegar, 2 cloves of garlic, and  add a pinch of salt until like a paste.  
  3. Heat the oil, add this chilli paste and boil it 2 or 3 mins.
 To cook noodles:-
  1. Bring a large pot of water to a boil. 
  2. Drop a pinch of salt and 1 tsp of soy sauce in the water.
  3. Place the noodles in the boiling water until tender. keep it aside.
Method:-
  1.    Take a large pan, fry green chilli, chopped onion, tomato, ginger, garlic, cabbage for a few mins.
  2.     Add 2 tsp of thai red chilli sause.
  3.     Add Ginger garlic paste, ajinomoto, all vegetables.
  4.     Saute in high heat for a minute.
  5.     Mix in the noodles thoroughly.
  6.     Add soy sauce, oyster sause, tomato sause, a pinch of brown sugar, saute it well.
2. Make the Chicken Meatballs:-

  • 1. Mix chicken and egg until well blended. Set aside.
    2. Combine all the ingredients given above under " Chicken meatballs" and add ground meat  in a large bowl. Mix well and form into meatballs. 
  • 3. In a large skillet, heat the oil over medium-high heat and Cook meatballs until golden brown; drain.

    Make the Sauce:-

    1. Grind tomatoes in a blender until smooth. Keep aside.
  • 2. Heat the olive oil in a  saucepan.
    3. Add the garlic, green chilli and Onion. Cook until the onion is soft.
    4. Add the tomato paste and cook for 3 to 4 minutes. 
5. Now add Fried meatballs and Cook another 2-3 minutes.
6. Transfer the noodles to a serving plate and top with meatballs .
7. Serve warm.
